On this reasoning it would come ultimately from Vulgar Latin *bulliōnem, a nominal derivative of Latin bullīre ‘boil’, from bulla ‘bubble’ (source of English boil). The present-day meaning ‘gold and silver in bulk’ had developed by the mid-15th century.
